Ingredients:

Rice: 2 cups

Vegetables (carrots, peas, potatoes, cabbage, capsicum): 2 cups chopped into small pieces

Onion: 1 large finely chopped

Tomato: 2 finely chopped

Yogurt: ½ cup

Ginger-garlic paste: 1 tablespoon

Green chillies: 2 chopped

Red chilli powder: 1 teaspoon or to taste

Turmeric powder: ½ teaspoon

Salt: to taste

Biryani spice: 1 tablespoon

Cinnamon: 1 inch piece

Cloves: 3-4 pieces

Black pepper: 4-5 pieces

Cardamom: 2 pieces

Baking leaves: 2 pieces

Oil or ghee: 4 tablespoons

Water: 4 cups for cooking rice

Recipe

* Boil 4 cups of water and salt in a pot. Then add rice and boil until it is 70% cooked. Then strain the water and keep the rice aside.

٭ Heat oil or ghee in a pan, add cinnamon, cloves, black pepper, cardamom and bay leaves and fry until fragrant.

٭ Add chopped onion and fry until golden. Then add ginger garlic paste, green chillies and chopped tomatoes and cook for 2-3 minutes.

٭ Add chopped vegetables (carrot, potato, cauliflower, peas) and fry for 5-7 minutes.

٭ Add turmeric powder, red chilli powder, biryani masala and salt to it and mix well.

٭ Then add curd and mix well and add 1 cup of water and cover and keep it on low heat for 5-7 minutes so that the vegetables become soft.

٭ Now add the rice to the vegetables and make a layer. After that add ½ cup of water and mix lightly with a spoon and cover the pan and keep it on low heat for 10-15 minutes so that the aromatic taste of biryani comes out.

* Your vegetable biryani is ready. Serve it with raita or salad
